no mayo potato salad

according to the barefoot contessa (my idol), the french make potato salad sans mayo and add lots of flavor with herbs and white wine. you know, a bit more upscale than the potato salad you bring to the family cookout.

here's a tip: boiling potatoes in water makes them taste like, well, water. cover your spuds with chicken stock and a splash of white wine (or lemon juice) and let them simmer until fork tender.

pour your favorite vinaigrette on top and mix in some basil, dill, or parsley.

suck it mayo.

Awesome tip. I'm definitely going to try this as a side for dinner. I usually eat boiled potatoes with a drizzle of olive oil and vinegar, but this sounds like a nice little change. Plus, I have deep love for almost anything that's cooked in wine.

This is how my Future-MIL makes potato salad and it is so much better than the mayo-laden stuff, which always reminds me of the nasty wares trapped inside a grocery store's deli counter. Love the chicken stock tip too!

Boiling the potatoes in chicken stock and wine - who woulda thought?! And I just boiled some in water last night. I feel like such a loser. This salad looks scrumptious!

great idea with stock. makes sense. my mom also uses stock to cook up her brown rice to give it more favor.

You comment on the barefoot contessa makes me think of 30 Rock when Liz Lemon runs into her in the Hamptons.

growing up I had the hardest time going to BBQ's etc. I always made the wonderful salad recipes from my mom (american). Noodle salad, potato salad...all of them have mayo on them of course. A bunch of mayo actually. Over here in Germany people think that is super gross ^^ It took me years to finally get people to eat it....and of course they like it. But they wont eat a lot of it because it is so rich. Here in Germany salads are usually made of a vinaigrette of some sort. My grandmother definitely makes the best! :-D

love the idea of white whine in a salad dressing!!

love it. I never eat potato salad bc I feel like a lard ingesting all that mayo. It actually makes me feel ill after even if it tastes so good when I'm eating it. this is an awesome alternative.

something tells me i would love a few crumbles of feta inside this. i grew up eating potato salad with greek yogurt that was mixed with loads of herbs. we never had mayo- we all hated it.
