according to the barefoot contessa (my idol), the french make potato salad sans mayo and add lots of flavor with herbs and white wine. you know, a bit more upscale than the potato salad you bring to the family cookout.
here's a tip: boiling potatoes in water makes them taste like, well, water. cover your spuds with chicken stock and a splash of white wine (or lemon juice) and let them simmer until fork tender.
pour your favorite vinaigrette on top and mix in some basil, dill, or parsley.
