ed and i thrive on simple fresh meals that can easily be converted to a vegetarian dish. this one is hearty enough for dinner.
chorizo and tomato salad
cherry tomatoes
basil
red onions
chorizo sausage (we used chicken sausage)
chopped garlic
red wine vinegar
extra virgin olive oil
salt
pepper
1. slice tomatoes, basil, and red onions. set aside in a large bowl and sprinkle with salt and pepper.
2. coat the frying pan with olive oil and add chopped chorizo.
3. once the sausage has browned, add a generous amount of chopped garlic and a few glugs of good red wine vinegar.
4. pour the warm sausage mixture over the tomatoes and toss.
serve with crusty bread and feta cheese.

this is a delicious recipe. I make something similar in winter that includes some linguine. It makes the meal very hearty. I usually leave out the vinegar and add more EVOO if I feel like it's too dry but the sausage usually has enough natural oils in it that it's ok without it. It tastes really good with some freshly sliced or shaved parmesan. :)
We've been eating chorizo around here like it's going out of style. I can't wait to try this!

Yum! Made this for dinner last night (but subbed goat cheese for the feta since that's what we had on hand). It was delicious! Looking forward to putting it into regular rotation.
