i never ate edamame growing up, nor did i even know what it was. funny how you never put two and two together when you're younger... bacon comes from a pig? burgers come from a cow? and oh hey, edamame comes from that soybean field i used to run through on the farm.
i got hooked on edamame at some point when we moved to the city and this is most definitely my favorite way to eat it.
parmesan roasted edamame
12oz package frozen edamame
extra virgin olive oil
1/4 cup grated parmesan reggiano
salt and pepper to taste
1. preheat oven to 400F.
2. pour edamame into a colander and rinse under cold water to unthaw, or leave the bag out on the counter for a few hours.
3. spread the edamame out on a baking sheet and drizzle with olive oil.
4. sprinkle parmesan over top and season with salt and pepper. go easy on the salt since the parmesan is already salty.
5. bake until cheese is crispy and golden, about 15-20 minutes.

Yum! I've never thought of putting edamame with parmesan. Plan on trying this for sure.
we've been doing this exact same recipe with broccoli and we devour 3 whole heads of it a night. i never thought of trying it with beans... but i guess they will be next!
