nonstick cookware has made a bad name for itself in being unsafe due to the harmful PFCs (perfluorocarbons) you ingest after cooking on it. that being said, i don't recommend frying an egg on even the most perfectly seasoned cast iron skillet as it literally becomes one with the pan (at least for me).
belgian-based greenpan cookware is nonstick, PTFE-free (sans teflon), and the recycled aluminum base emits zero toxic fumes under high heat. why didn't we make nonstick pans like that in the first place?

i've stopped using aluminum anything, since high levels of aluminum have been found in alzheimer patients' brains. (not saying it's the cause of alzheimer's, but as the disease runs in my family, i'm extra-cautious!)
i instead use this kick-ass ceramic-interior paderno frying pan that my mum gave me - the ceramic means that not only does it heat evenly, but it is naturally non-stick as well! i've never made a more perfect fried egg...so i'm a total convert. :)
bummer... just bought TWO new non-stick pans...

Gosh I never thought there was more to the nonstick cookware world. I even bought a new nonstick set a few months ago. I still haven't opened the box but now I'm less enthusiastic about using the new pans. I will definitely look into greenpan. Thanks for the eye opener!
