strawberry compote

by mid-june i've nearly reached the point where turning on the oven is completely out of the question and ice cream moves it's way front and center. remember when we discussed breaking the dessert habit? yeah, me either. what the heck was i supposed to do with all those strawberries?

ciao bella pint size gelato is a favorite in our house, plus the smaller size keeps portions down. hey, if there's a quart of ice cream in the fridge it will likely get eaten. quality over quantity.

with three ingredients you can hardly call it a recipe, but here goes...

strawberry compote
2 cups strawberries, thinly sliced
1/4 cup freshly squeezed orange juice
1-2 tbsp sugar (depends on the sweetness of your berries)

1. whisk together orange juice and sugar in a bowl and pour over strawberries.

makes a perfect topping for meringues and angel food cake as well. enjoy!

This looks so good! I have recently gotten into putting lemon zest on vanilla ice cream after having it on vacation, so yummy!

Ooh I've never thought to add orange juice. This looks fantastic.

And I could not agree more, turning on an oven in the summer is just so far out of the question I can't even think about it.

I don't mind turning on the oven in hot weather but my husband hates it. However, if it's a) raining and b) in the evening, I can often get away with baking anyway.since that does make things somewhat cooler. So if it rains all day tomorrow, as predicted, I'll be making scones. (And if it still gets a little hot, I bet all will be forgiven once he starts eating.)
