i've been forgoing leafy green salads all together in lieu of fresh summer fruits and veggies eaten straight up. there's at least one night during the week that we grab a slice of pizza or eat leftovers (again) and a quick fresh salad served alongside makes all the difference.
half of a small seedless watermelon, cubed
handful fresh basil
good extra virgin olive oil
red wine vinegar
freshly cracked pepper
in a large bowl, toss watermelon with a splash of olive oil and vinegar. top with sea salt, pepper, and fresh basil. enjoy!
also perfect with salty feta cheese crumbles but this particular watermelon salad accompanied a cheesy delivery pizza. i figured i'd keep the cheese to cheese ratio to a minimum.
